So, as I mentioned yesterday, last weekend was a healthy one in terms of food. No sweets, no chocolate, no fun. But it's ok, I still ate something delicious...
A few weeks ago, I ran across this recipe on one of my favorite blogs, A House In The Hills. Have you read Sarah's blog? If you like gorgeous decor, amazing fashion and cute dogs that seem to have no problem wearing various accessories, then you should check it out...
Anyway, so I made this quinoa salad and snacked on it over the course of the weekend. It is very tasty, fresh, peppery and crunchy (from the almonds) all in one. I heart anything crunchy...
Here is my version of the salad...
Salad:
2 cups of cooked quinoa
1/4 cup of canned chickpeas, drained and rinsed
1/3 cup of chopped tomatoes
2 cups of arugula
1/4 cup of chopped almonds or walnuts
1/4 cup of diced red onion
1/4 cup of feta cheese
Dressing:
Juice of one lemon
1 - 2 tablespoons of extra virgin olive oil
Salt & pepper to taste
In a large bowl, toss all of the salad ingredients together. In a small bowl, whisk the lemon juice, the olive oil, salt and pepper. Slowly drizzle the dressing on the salad, yep slowly, then toss everything together again. Feel free to add more or less of any ingredient. It will still be delish and your body will thank you for it... Promise. :)
