If you like Reese's Peanut Butter Cups, then this delectable two-biter sensation is just for you! My wonderful friend introduced me to this recipe last weekend and it now has a new home in my recipe collection. They are super easy to make and are perfect for a party. Other than a sweet tooth, here is what you need:
40 Reese's Miniature Peanut Butter Cups
1 stick of unsalted butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 375. Remove the wrappers from the Reese's and set aside. Try to resist the urge to eat all of them. :) Spray a mini muffin pan with cooking spray or line them with paper cups. I just use the spray if I am using a nonstick muffin pan.
Using an electric mixer, beat the butter, sugar, brown sugar, peanut butter, egg and vanilla until fluffy. In a separate bowl, mix the flour, baking soda and salt. Gradually add the dry mixture to the wet mixture and beat until well mixed. Shape the dough into 1-inch balls and drop into the muffin cup. Don't flatten them!
Bake for 10-12 minutes until they are puffed and lightly browned. You will be tempted to eat them, but wait! After removing them from the oven, press a Reese's into the center of the cookie. Don't worry about your fingerprints- the chocolate will melt and cover them up. Let them cool completely in the muffin pan.
I literally had to stop myself from eating these. They are YUMMY! Let me know if you make them!
