I have GOT to make this before peach season is over. I live in Georgia, so there are no excuses... The rosemary is an interesting twist...
Rosemary & Peach Mojito
1 small peach (roughly chopped)
2 ounces white rum
1 ounce Rosemary Simple Syrup (recipe here)
1 ounce freshly squeezed lime juice
1 teaspoon finely chopped fresh rosemary
Club soda
In a glass, muddle the peach, Rosemary Simple Syrup, lime juice and rosemary. Add rum and stir. Fill glass with crushed ice and top off with club soda. This recipe makes one. That is probably a good thing. :)
Definitely sounds interesting, and yes, no excuses...we have not shortage of peaches (and I have fresh rosemary growing in our herb garden!).
