My favorite type of food in the whole wide world is Mexican food, so naturally my favorite soup is chicken tortilla soup. A great friend of mine gave me a cookbook that has the absolute most easiest recipe for this soup. Once the temperature dropped below 70, I had to whip this up. Here is what you need and what to do:
2 tablespoons of extra virgin olive oil
1 medium onion, chopped
2 cloves of garlic, sliced
1 chipotle in adobo sauce, minced
1 tablespoon of chili powder
2 teaspoons of kosher salt
2 teaspoons of kosher salt
6 cups of chicken stock
2 cups of frozen corn, thawed
2 fresh tomatoes, chopped or 1 can of Rotel tomatoes (makes it spicy!!)
2 cups of shredded rotisserie chicken
Juice of 2 limes
1/2 cup of cilantro, chopped
In a large pot, heat the olive oil. Add the onions, garlic, chipotle and chili powder. Cook for 5 minutes or until the onion softens. Add the chicken stock. Bring it to a boil, then simmer for 10 minutes. Add the corn and simmer for another 5 minutes.
Turn off the heat, then add the tomatoes, chicken, cilantro and lime juice. Get a big bowl, ladle a few ladles of soup, top it with more cilantro, tortillas (I actually like mine on the side and use them for dipping) and maybe some diced avocado.
How easy is that?? I think you'll like it...

ok confession- Im a vegetarian but this soup looks sooo good!! wonder if It would taste the same w/out the chicken- probably not huh?
ReplyDeleteI think it would be great without chicken! You could use vegetable stock, definitly use the Rotel tomatoes, and add some canned black beans, rinsed.
