Over the holidays while I was eating gumbo, cake, chips and candy, I made this collage to get myself prepared for real life eating. By the way, this was the first collage I made in Photoshop. How'd I do??
Anyway, to jump start my body and quite frankly my mind, I did some reading on the health benefits of some of my favorite greens like kale, spinach, green beans, and avocado. Seeing words and phrases like "antioxidants," "cancer-fighting," "healthy skin" and "protein-rich" were not new to me, but helped me get motivated. It also made me feel guilty about the five slices of pound cake I ate. Sigh... So I set out to find some new "green" recipes to get me going...

The collage looks awesome!! Very healthy!! LOL I too am trying to incorporate more greens. I tried a green smoothie the other day and surprisingly, I loved it!!
ReplyDeleteLove green smoothies! Spinich, banana, vanilla almond milk is always a good and economical choice. Also I love an avacado drizzled/drenched in lime juice and a smattering of sea salt. Can't wait to hear if you try going GF!

ReplyDeleteIt all looks so beautiful esp. that avocado and edamame salad. I'm a big fan of sautéing my greens with a bit of garlic and salt. It totally keeps the flavors clean and fresh.

Eating green never looked so delicious. I love your holiday food of choice better (gumbo, cake and chips..I am so there) but I know the reality is such that its time for many of us to redeem ourselves and get busy eating healthier. That first salad looks amazing, and I bet is delicious!

I have a major love for greens, especially avocado, spinach and arugula! But guess what? I can't find any of those here in the Island, except avocados and just a few times :(

I have eaten a fair bit of kale this year! love it sauteed with garlic and it goes really nicely with fish...that recipe for the beans w/ grainy mustard looks delish

ReplyDeleteYummy! This all looks great! I have been on a big brussel sprout kick this year... I don't know why, I haven't ever eaten them before, but my sister made some roasted ones with just salt and pepper over Christmas that were DIVINE. I can't get enough of them and they are so easy! But, I will definitely be adding some of your recipes to my menu :)
